Ingredients:

1 beef tongue boiled and peeled

3 bay leaves

1 teaspoon thyme

1 bottle of el yucateco annatto / achiote

¼ cup orange juice

1 teaspoon marjoram

2 garlic cloves

2 tablespoons capers

2 tablespoons chopped pickles

1 tablespoon salt

1 teaspoon pepper

1 cup white wine

Salt and pepper

Preparation:
1. Slice the tongue, place in a greased oven pan.

2. In the blender, grind the bay leaves, thyme, el yucateco annatto / achiote, orange juice, marjoram and garlic then season with salt and pepper.

3. Coat the tongue with this mixture, pour the white wine over the tongue then cook covered at 400f for 30 to 45 minutes until the tongue is tender, serve with black beans or white rice.
