Ingredients:

2.1 oz of el yucateco annatto/achiote paste.

4 red snapper fillets

¼ cup lime juice

½ cup orange juice

salt and pepper

1 red onion sliced

1 tomato sliced

½ red bell pepper sliced

½ green bell pepper sliced

Preparation:

1. Mix in a food processor or blender the el yucateco annatto paste, the lime juice and the orange juice.

2. Season fish on both sides with salt, pepper and lime juice.

3. Place the fish on the grill ( if you have one of this portable grills where fish or meats are put inside, they are great) spread the annatto paste that you made on the part of the meat, top it with the slices of onion, tomato, peppers and close your grill or put it on the charcoal and roast it on both sides or until it is golden.
