Ingredients:

½ brick of el yucateco annatto/achiote paste (1.7 oz)

8 zucchini

1 tablespoon vegetable oil

½ onion

1 garlic clove

½ lb turkey chorizo

¾ lb minced pork meat

1 cup tomato paste

½ cup orange juice

1 boiled and diced potato

Salt

Preparation:

1. Heat 4.5 cups of water, when it starts boiling add a teaspoon salt, add the zucchini and let them boil for four minutes, take them out of the water and set them aside.

2. Dissolve el yucateco annatto in the orange juice and the tomato paste.

3. Heat the oil, fry the onion for 3 minutes, add the garlic, the chorizo, fry for 2 minutes, add the meat, mix everything well, pour the tomato paste with the annatto mixing everything, add water, season with salt and pepper, let it cook for one hour, stir occasionally, add the potato.

4. Cut the zucchini in halves lengthwise, with a spoon take out the inside part of the zucchini, fill them with the minced meat and serve.
