Ingredients:

½ bottle of liquid el yucateco annatto / achiote

¼ cup orange juice

2 tablespoons lemon juice

1 tablespoon salt

2 tablespoons olive oil

2 lb shrimp, peeled and headless

1 smashed avocado coated in lemon juice

1 pineapple in thin slices

Crackers or toasted bread

½ red onion finely sliced

Preparation:
1. Mix the el yucateco annatto / achiote, the orange juice, the lemon juice and the salt. Coat the shrimp and let them marinate for at least 30 minutes in the refrigerator.

2. Heat the oil, fry the shrimp. Layer a cracker with avocado, pineapple, a shrimp and then red onion.
