Ingredients:

2 lb pork ribs

1 cup of liquid el yucateco annatto / achiote

1 cup of pineapple juice

2 tablespoons of white vinegar

1 garlic clove, chopped

1 tablespoon of salt

1 teaspoon of pepper

Preparation:
1. Combine the liquid annatto/achiote with the pineapple juice, vinegar, salt, garlic and pepper; whisk everything well.

2. Combine the ribs with the mixture, place them into a plastic bag or in a closed container, (ideally they should marinate for at least 2 hours) if left in the fridge marinate for a minimum of 1 hour.

3. Set the oven at 400f, bake for 1 ½ hours, cover the casserole with aluminum foil, check them every 30 minutes and bathe them with the mixture to keep them moist.

Note: you can use the same mixture to cook beef ribs or fish.
