Ingredients:

3 pounds hind shank beef with bone

½ onion chopped

2 bay leaves

½ quart orange juice

½ stick el yucateco annatto / achiote

3 cloves garlic

1 potato, cut in strips

2 carrots, cut in strips

2 zucchini, cut in strips

Salt and pepper

Preparation:

1. Cook the meat with the onion and bay leaves for an hour.

2. Add the orange juice, the annatto/achiote, the potatoes, the carrots and continue cooking for another 30 minutes.

3. Add the zucchini. Season with salt and pepper. Cook until the meat is soft, then serve.

Cooking time: 2 hours
