Ingredients:

3 pounds of pork backbone

3 tomatoes

1 ¼ onion

2 cloves garlic

2 tablespoons oil

¼ cup liquid el yucateco annatto / achiote

2 carrots in slices

1 peeled and boiled potato cut in cubes

2 zucchini in slices

Salt and pepper

Preparation:

1. In a pot, cover the meat with water. Add the onion and cook until the meat is soft.

2. In blender place tomatoes, onion, garlic and the el yucateco annatto / achiote. Blend everything well.

3. In a pot heat the oil and fry the blended mixture for five minutes. Add the meat, the broth and the vegetables and let boil for 15 minutes. Serve.
