Ingredients:

1 chicken, cut into pieces

2 cups pineapple juice

½ brick of el yucateco annatto/achiote paste (1.7oz.)

¼ cup of soy sauce

1 cup brown sugar

1 teaspoon lemon juice

¼ cup white vinegar

1 teaspoon salt

Preparation:

1. Dissolve the el yucateco annatto paste in the pineapple juice. Add
the soy sauce, sugar, lime juice, vinegar and salt, mix everything well.

2. Coat the chicken pieces with the sauce then marinate overnight.

3. Heat the oven to 350 º f, cook the chicken pieces, covered,
for 45 minutes with the marinade, uncover and bake for another 15
minutes or until the chicken´s skin is golden. Serve with white rice.
