Ingredients:

¼ cup vegetable oil

8 corn tortillas

1 ½ cups refried beans

1 cup of cochinita pibil (prepared with el yucateco annatto/achiote)

Onion sauce

1 teaspoon white vinegar

1 teaspoon lime juice

¼ teaspoon salt

½ teaspoon oregano

1 red onion cut into strips

Preparation:

1. Mix the ingredients for the onion sauce well, mix and set aside.

2. Heat the oil, fry the tortillas and lift the thinner layer, heat the beans, fill the tortillas with the beans, top it with the cochinita and onion sauce.
