Ingredients:

1 tablespoon of oil

1 chopped onion

2 chopped garlic cloves

1 tablespoon of salt

1 tablespoon of dry oregano

1 lb ground pork meat

4 tomatoes

4 tablespoons of el yucateco red sauce

Flour tortillas

¼ c sour cream

1 cup of refried beans

1 cup of chopped lettuce

Preparation:

1. Boil 3 tomatoes in water for 10 minutes, blend them with half of the onion, 1 garlic clove and the oregano.

2. Heat the oil. Fry the rest of the onion until translucent, add the other garlic clove and fry for 2 additional minutes then incorporate the meat and fry it for 6 additional minutes. Add the blended tomatoes and the el yucateco sauce, mix well and let it cook at medium heat for 30 minutes, stirring occasionally.

3. Chop the remaining tomato, without seeds, into small cubes, heat the tortillas, spread them with the refried beans, sour cream, meat, lettuce, some of the chopped tomato, el yucateco red sauce then roll into a burrito.
