Ingredients:

1 brick of el yucateco annatto/achiote paste (3.5oz.)

1/2 cup white vinegar

The juice of 4 limes

2 cups orange juice

2 white onions

1 teaspoon of dry oregano

2 garlic cloves

1 spoon salt

1 chicken leg and thigh

2 slices of pork leg

4 slices of pork loin

2 fish fillets

Preparation:

1. Place in the blender the el yucateco annatto paste, the vinegar, the lime juice, the orange juice, ¼ of the onion, oregano, garlic cloves and salt, blend well.

2. With this juice, coat the chicken’s leg and thigh, the pork’s leg, the loin and the fish fillets, set aside and let them marinate for at least 15 minutes.

3. Place the meats and the fish on the grill; roast on both sides or until they are golden, serve with beans and tortillas.
