Ingredients:

2 lb white fish fillets

1 unripe plantain banana, finely sliced

½ bottle liquid el yucateco annatto / achiote

¼ cup pineapple juice

½ teaspoon oregano

½ teaspoon cumin

2 garlic cloves

2 tablespoons vinegar

1½ teaspoon salt

¼ cup vegetable oil

Preparation:
1. Blend annatto/achiote, pineapple juice, oregano, cumin, garlic, vinegar and salt.

2. Coat the fish with this mixture on both sides and let them marinate for at least 30 minutes in the refrigerator. Once they are marinated, bake them at 350f for about 20 minutes.

3. Fry the bananas in the oil until they are crunchy on both sides. Top the fish with the fried plantains and serve with white rice.
