Ingredients:

1 ¼ lb of white fish cut in strips

¼ cup of liquid el yucateco annatto / achiote

¼ cup white wine

2 tablespoons lemon juice

2 tablespoons oil

1 garlic clove

12 corn or flour tortillas

1 cup of sliced romaine lettuce

½ red onion, sliced

Preparation:
1. Mix the annatto/achiote, the white wine, the lemon juice and the garlic with the fish strips. Season with salt, pepper and leave marinating for 15 minutes.

2. Heat the oil and fry the fish strips, 3 minutes each side.

3. Place the fish strips in each tortilla. Add some lettuce, red onion and serve.
