FISH AND CHIPS WITH HABANERO MAYONNAISE

Ingredients:

Frying oil

8 fish fillets cut into strips

2 c flour

Salt and pepper

1 ½ c cold beer

4 cups of frozen french fries

1 cup of mayonnaise

4 tablespoons of el yucateco red habanero hot sauce

1 tablespoon of lemon juice

Preparation:

1. Heat the oil.

2. Dip all fillets in the flour then mix the remaining flour with the beer (if the mixture is very thick add more beer). Dip flour coated fillets in this mixture then fry for 8-10 minutes until brown. Place them on a napkin lined plate to remove extra oil.

3. In the same oil, fry the potatoes until brown.

4. Combine the mayonnaise, red habanero sauce, lemon juice and stir well.

5. Serve the fish and chips with the mayonnaise.
