Ingredients:

1 tablespoon of olive oil

1 boneless chicken breast cut in cubes

1/3 cup of mayonnaise

1/3 cup of plain yogurt

2 teaspoons powered curry

2 tablespoons el yucateco red habanero hot sauce

1 tablespoon lemon juice

1 teaspoon salt

1 teaspoon pepper

1/3 cup raisins

1 apple, cored and chopped

½ cup toasted sliced almonds

1 cup toasted coconut

1 cup chopped coriander

Lettuce leaves

Preparation:

1. Season the cubed chicken breast with salt and pepper.

2. Heat the oil, fry the chicken until evenly brown.

3. Combine the mayonnaise, yogurt, curry, el yucateco red habanero hot sauce, lemon juice, salt and stir well then combine the chicken, raisins, almonds, coconut, coriander and serve over a lettuce leaf.
