Ingredients:

2 lb pork legs in pieces

½ brick of el yucateco annatto / achiote

¾ cup orange juice

2 tablespoons white vinegar

1 tablespoon salt

½ cup pork lard

Tostadas

Preparation:
1. Blend the el yucateco annatto / achiote, the orange juice, the vinegar and salt.

2. Place the meat in a greased tray or in an oven pan then coat it with the mixture you have blended, cover with tin foil, cook for 1 ½ hours at 400f or until the meat is very tender.

3. Heat the lard, then fry the meat moving it constantly for 10 minutes, then serve on tostadas or in tacos.

Tip: serve your cochinita with a radish sauce, red onion, coriander, orange juice, vinegar and salt.
