Ingredients:

1 whole chicken, washed

¾ brick el yucateco annatto / achiote

½ cup orange juice

1 teaspoon fresh oregano

½ teaspoon cumin

¼ cup white or apple cider vinegar

4 garlic cloves

1 ½ teaspoons salt

1 teaspoon sugar

2 chopped onions

Preparation:
1. Blend annatto/achiote, orange juice, oregano, cumin, vinegar, garlic, salt and pepper.

2. Coat the chicken with this mixture very well. Marinate overnight.

3. Bake at 400f for an hour, covered. After 30 minutes, coat with the annatto/achiote that was left in the tray and uncover.

3. Serve your chicken with white rice and black beans.
