Ingredients:

4 chicken legs and thighs (skinless)

½ stick of el yucateco annatto / achiote

1 cup pineapple juice

1 teaspoon white vinegar

1 tablespoon salt

2 garlic cloves

2 tablespoons olive oil

Red onion

Black beans

Preparation:
1. In a blender, combine el yucateco annatto / achiote, pineapple juice, vinegar, salt and garlic. Blend well.

2. Heat the oil in pan. Fry the chicken legs and thighs on both sides. Pour in blended mixture. Cover and let boil for about 30 minutes or until the chicken is soft.

3. Serve with red onion and black beans.
