Ingredients:

2 lb of pork head in slices or leg in slices then chopped

2 guajillo chiles boiled seedless and deveined

¼ stick el yucateco annatto / achiote

2 tablespoons of vinegar

½ cup orange juice

2 garlic cloves

¼ onion

½ teaspoon dry oregano

½ teaspoon cumin

1 ½ tablespoons salt

2 teaspoons oil

Coriander leaves, chopped fine

Onion, chopped

Pineapple, small slices

Preparation:

1. Blend chiles, annatto/achiote, vinegar, orange juice, garlic, onion, oregano and salt, then strain.

2. Cover the meat with the mixture and marinate for at least two hours in the refrigerator.

3. Fry the meat in the oil at medium heat, covered, moving constantly until it is ready, for about an hour.

Tip: serve your tacos with onion, lemon, coriander and pineapple.
